The lost space of removed cabinets can be retrieved by installing shelves or grocery baskets underneath the work table.

Keep the stove and the sink in their current positions. Repositioning will cost a fortune, you will need to install new gas and water pipes, will require extensive work and labor. So, if you are remodeling on a budget, shifting places will be an unnecessary and easily avoidable expenditure.
